I'm making this again very soon! I'll have to figure the calorie and carb counts later. This is also a good solution for people who's other family members aren't doing low carb. You could add potatoes, carrots, onions to their bowls. For my husband I will have to come up with other veggies seeing that he considers broccoli the AntiChrist (and it's evil cousin: cauliflower).
This one is more of an idea than an actual recipe.
- Leftover Turkey or Chicken
- Veggies (I used broccoli and green beans)
- Chicken Bullion
- Salt, Pepper, Parmesan Cheese, Oregano
- Atkins All Purpose Bake Mix
I mixed the turkey chicken bullion packet (no msg), veggies, salt, pepper and oregano together and heated it in the microwave with about a teaspoon of half&half and a teaspoon of water.
I followed the recipe for Atkins biscuits but added pepper and a little Parmesan cheese. (Think Red Lobster Biscuits) I'd never used this stuff before and was hesitant to even try it....most low carb bread stuff is nasty!
Take heated filling and put in ramekins. Cover with pieces of buscuit dough. Cooked for about 20 minutes at 400. Pace nervously wondering if you just wasted a bunch of time and food....
I will have to try making the biscuits by themselves too - I'm impressed.
