- 6 Eggs
- 3 T. Heavy Cream
- 1 1/2 C. Shredded Cheese
- Chopped Onions, Mushrooms, Fresh Basil, Red Pepper and Prosciutto
- Salt and Pepper to taste
Beat eggs, salt, pepper and cream until well blended. Add 1/2 C. of the shredded cheese and pour into a pie plate. Bake at 375 until eggs just start to set. Remove from oven and top with chopped basil, vegetables, prosciutto and remaining cheese. Return to oven for about 15 minutes, or until eggs are not runny. This will puff up a little as it is cooking and deflate as it cools. Slice into wedges and serve while warm.
