This is my own creation with a little inspiration from PFChang's Lettuce Wraps. Please feel free to share this recipe on your blog or facebook page, we just ask that you link or trackback to this post. :)
1 lb. lean ground chicken
1 c. sliced mushrooms
2 stalks celery, chopped
1 clove garlic, chopped
1 zucchini, chopped
1/2 onion, chopped
2 T. Less Sodium Soy Sauce
2 T. Sesame Oil
2 T. Sugar Free Apricot Jelly + Fiber
Fresh grated ginger, salt, pepper, hot sauce
Saute veggies in 1 T. Sesame oil. When still just a little crunchy move to a seperate plate. Add the other 1 T. Sesame oil and lighty brown ground chicken. When chicken is cooked through add veggies back in along with soy sauce, salt, pepper, ginger, desired hot sauce (I use Cholula) and apricot jelly. Mix well and simmer for about 5 minutes. Serve on large leaves of lettuce (larger size Romaine probably would have been easier than the Butter Lettuce I used.).
Modifications: This is very messy! Could be served over riced cauliflower. For the non-low carbers in the family this could be mixed in with angel hair pasta or served over rice.
These amounts are a rough idea of the calorie and carb counts for about 1/3 of the batch. The photo shows some red chili paste that is not included in the counts below. That stuff is too hot for me!
